Chicken Cordon Bleu
6 skinless, boneless chicken breast halves
6 slices Swiss cheese
6 slices ham
3 tablespoons all-purpose flour
1 teaspoon paprika
6 tablespoons butter
1/2 cup dry white wine
1 teaspoon chicken bouillon granules
1 tablespoon cornstarch
1 cup heavy whipping cream
This is a great comfort food meal. Take the chicken breasts, and place them on a piece of plastic wrap and place a piece of plastic wrap on top of it. Then take a mallet or a heavy pan and pound the chicken into thin pieces, be careful not to tear the chicken at all, but just make it easier to roll up later.
Once you have this step done remove the plastic and put cheese and a ham slice in the middle and leave space of about a half of an inch then fold the edges up and roll the piece of chicken so all of the cheese and ham is hidden inside. Then take toothpicks and secure them so it will not unfold and leak while cooking.
Mix flour and paprika in a bowl and then coat the chicken pieces with them.
Heat some butter in a large skillet over medium-high heat. Place the chicken in there and flip when the sides become browned. Once all sides are browned you can add the wine and bouillon, then lower the heat to low and simmer for 30 minutes with the cover on until the chicken is fully cooked. Once the chicken is cooked you can remove the toothpicks and plate the chicken for serving. pour combined starch and cream that has been whisked to soft peaks in the skillet while picking up some great flavor, then pour the mixture over the chicken.
