Sausage and Apple and Cranberry Stuffing
You will need:
1 1/2 cups cubed sesame bread
1 3/4 cups cubed white bread
2 cups cubed whole wheat bread
1 pound ground turkey sausage
1 cup chopped onion
3/4 cup chopped celery
2 1/2 teaspoons dried sage
1 1/2 teaspoons dried rosemary
1/2 teaspoon dried thyme
1 Honey Crisp apple, cored and chopped
3/4 cup dried cranberries
1/3 cup minced fresh parsley
1 cooked turkey liver, finely chopped
3/4 cup turkey stock
4 tablespoons unsalted butter, melted
Before you get started preheat your oven to 350 degrees.
While the oven is heating get the cubes of bread spread on a single layer on a baking sheet. Bake for about 5 minutes. This should be enough for them to get evenly toasted. You can then put those cubes into a large bowl. We will revisit them in a bit.
Heat a skillet to medium heat. Then add the onions and sausage. Make sure to break the sausage up in order to keep them in small pieces. Combine with the celery, sage and thyme and rosemary. stir for a couple minutes to make sure everything is blended properly.
Next pour the sausage mixture with the bread. This is the place where the chopped apples, cranberries, parsley, and liver are added. You can drizzle with turkey stock to moisten and then spoon it into the turkey. This is a great way to get a different flavor into the traditional turkey.
